Thrace Θράκη
Thracian cooking stands at the crossroads of northern Greece, Bulgaria, and Turkish Thrace, displaying an earthy, spice-forward palate. Long, cold winters encourage clay-pot cooking, sourdough-based pastries, and preserved cured sausages such as kavourmas. Bulgur, pulses, and brassicas feature prominently, often cooked alongside game or mutton. Fragrant elements like cumin, allspice, and dried mint are used with a generosity rarely found further south, balancing rich braises, sweet sesame confections, and dense savoury pies that reflect peaceful cohabitation among Christian, Muslim, and refugee communities.
