108Custard bougatsa
Μπουγάτσα με κρέμα · bougatsa me krema
Also called sweet bougatsa, Thessaloniki custard pie.
Method
Classic Thessaloniki home-style bougatsa. Serve warm with Greek coffee.
You will need
- heavy saucepan
- whisk
- pastry brush
- large baking sheet
- chef's knife
- For the filling, heat the milk and sugar in a saucepan over medium heat until warm and the sugar dissolves. 4 min Ready when: steaming milk
- Rain in the fine semolina in a slow, steady stream while whisking continuously to avoid lumps, cooking until it thickens into a glossy, bubbling porridge. 6 min Ready when: thick bubbling semolina cream
- Take off the heat, stir in the 30 g of butter until melted and incorporated, and let cool for 15 minutes, stirring occasionally. 15 min Ready when: warm, smooth semolina cream
- Preheat a conventional oven to 180°C (350°F) and lightly butter a large flat baking sheet. 10 min · 180°C / 350°F Ready when: oven fully heated
- On a clean work surface, lay down one sheet of filo, brush gently with melted butter, and stack 4 more sheets on top, brushing each layer generously. 6 min Ready when: buttered filo stack
- Spread the warm semolina cream into a neat rectangle in the centre, leaving wide margins on all sides. 2 min Ready when: level cream layer
- Fold the pastry edges inwards over the cream to create an envelope, cover with the remaining filo sheets brushed with butter, and tuck all outer edges underneath to form a sealed packet. 5 min Ready when: neatly sealed rectangular parcel
- Transfer carefully seam-side down onto the baking sheet, brush the top with melted butter, and bake for 35 to 40 minutes until deeply golden and flaky. 38 min · 180°C / 350°F Ready when: deep golden brown, crisp surface
- Rest for 10 minutes on a cutting board, chop into bite-sized squares using a large chef's knife, and dust heavily with icing sugar and cinnamon before serving warm. 10 min Ready when: crisp crackle when sliced

Make ahead and storing
Custard can be made a few hours ahead; assemble and bake shortly before eating for maximum crispness.
Best enjoyed freshly baked; leftovers keep in fridge 2 days and should be reheated in an oven, not a microwave.
Substitutions
- coarse semolina for fine semolina. Produces a grainier, firmer texture rather than the silky custard of fine semolina.
Common mistakes
- Pouring semolina all at once into the milk. It clumps instantaneously into stubborn lumps that cannot be whisked smooth.
- Cutting immediately out of the oven. The boiling hot semolina cream will spill out; resting 10 minutes allows it to stabilise.
Regional variants
- Bougatsa Serron (made with paper-thin handmade tossed dough rather than commercial filo sheets)
- Bougatsa me tiri (savoury version filled with salty feta and mizithra)
About the dish
Bougatsa me krema is northern Greece's beloved breakfast and cafe pastry, brought to Macedonia and Thrace by Asia Minor refugees after 1922. Centers like Serres and Thessaloniki elevated the craft into a culinary trademark. Made with fine layers of buttered pastry wrapped securely around a smooth, thickened semolina custard, it is baked crisp and served hot from the oven, cut into bite-sized diamond pieces and dusted generously with icing sugar and ground cinnamon.
Found in Macedonia, Thrace. Cooked for everyday, sunday lunch.
Cousins elsewhere
- kürt böreği (Turkish). A layered, unstuffed Ottoman filo pie served hot dusted heavily with icing sugar.
- burek (Balkan). Derived from the Ottoman concept of börek, though bougatsa in Macedonia developed into an envelope-folded style known for sweet semolina cream.
