Method

Traditional overnight maceration style. Traditionally served by the teaspoon on a small glass plate, or spooned over Greek strained yoghurt.

You will need

  • Cherry pitter
  • Wide heavy preserving pan
  • Slotted spoon
  • Sugar thermometer
  • Sterilised glass jars
  1. Stem the sour cherries, pit them using a cherry pitter or clean hairpin over a wide pot to catch every drop of juice, and discard the stones. 45 min Ready when: Cherries pitted and juices preserved
  2. Layer the pitted cherries and granulated sugar alternately in a wide, heavy preserving pan, pour in the 100 ml of water, cover with a clean tea towel, and leave to macerate at room temperature for at least 8 hours or overnight. 480 min Ready when: Sugar largely dissolved into deep red juices
  3. Place the pan over medium heat and bring slowly to a rolling boil, skimming away any white or pink foam that rises to the surface with a slotted spoon. 10 min Ready when: Clear surface free of scum
  4. Simmer briskly for about 15 minutes, swirling the pan gently rather than stirring with a spoon to keep the delicate cherries intact. 15 min Ready when: Cherries glossy and floating
  5. Add the fresh lemon juice and continue boiling for another 3 to 5 minutes until the syrup registers 105°C (221°F) or a drop placed on a chilled saucer holds a firm, rounded pearl shape without spreading. 5 min · 105°C / 221°F Ready when: Syrup pearls cleanly on cold plate
  6. Ladle the hot cherries and syrup into warm, sterilised glass jars, seal tightly with lids, invert the jars for 10 minutes to pasteurise the lids, then turn upright to cool completely. 10 min Ready when: Jars sealed and vacuum set

Make ahead and storing

Must be made in advance; keeps for months unopened.

Store in a cool, dark cupboard up to 1 year; once opened, keep in the fridge for up to 6 months.

Substitutions

  • Morello cherries for fresh sour cherries. Morello cherries have identical tartness and firmness.

Common mistakes

  • Stirring vigorously with a metal spoon during cooking.. This crushes the fragile fruit skins and releases pulp, clouding the clear syrup.
  • Under-boiling the syrup.. Thin syrup will ferment over time and fail to preserve the fruit.

Regional variants

  • Macedonian version scented with a fresh sprig of pelargonium (arbaroriza) during the final boil.
  • Peloponnesian version flavoured with a piece of cinnamon stick.

About the dish

Sour cherry spoon sweet is the undisputed sovereign of Greek spoon preserves, traditionally offered alongside cold water and Greek coffee as an act of hospitality (filoxenia). Cultivated extensively across northern and central Greece, sour cherries (vyssina) possess natural acidity and firm flesh that perfectly counterbalances dense sugar syrup. While early modern fruit preservation methods emerged across the eastern Mediterranean, the classic Greek technique of macerating pitted cherries in sugar overnight preserves the fruit's vivid ruby hue and plump shape.

Found in all of Greece, Peloponnese, Macedonia, Thessaly. Cooked for everyday, summer.

Cousins elsewhere

  • Vişne reçeli (Turkish). Both preserve the tart fruit in a rich sugar syrup, though the Greek spoon sweet prioritises whole, plump fruit suspended in dense syrup rather than loose jam.
  • Murabba karaz (Levantine). Middle Eastern cooks similarly candy whole sour cherries in dense spiced syrup.
