Method

Taverna-style pan-fried lamb liver. Best enjoyed immediately as a hot meze with crusty sourdough bread.

You will need

  • large heavy frying pan or cast-iron skillet
  • slotted spoon
  • tongs
  • sieve
  1. Pat the cut liver pieces thoroughly dry with kitchen paper and season lightly with salt and freshly ground black pepper. 3 min Ready when: liver pieces are dry to the touch
  2. Heat 2 tablespoons of the olive oil in a wide, heavy frying pan over medium heat, add the sliced onions with a pinch of salt, and fry for 8 to 10 minutes until soft, sweet, and lightly caramelised, then remove them to a plate. 10 min Ready when: onions are soft and golden translucent
  3. Toss the liver pieces in the plain flour, shaking off any excess vigorously in a sieve so only a sheer dusting remains. 2 min Ready when: pieces are evenly coated without clumping
  4. Add the remaining olive oil to the same pan and set over high heat until shimmering hot. 1 min Ready when: oil ripples and is smoking very faintly
  5. Add the liver in a single layer and sear without moving for 2 minutes, then turn and fry for a further 1 to 2 minutes until browned on the exterior but still tender inside. 4 min Ready when: crisp browned crust on all sides
  6. Return the cooked onions to the pan, pour in the dry white wine if using, and let it bubble away vigorously for 30 seconds to glaze the pan. 1 min Ready when: liquid reduces to a glossy coating
  7. Remove the pan from the heat, squeeze over the fresh lemon juice, sprinkle with dried oregano and chopped parsley, toss gently once, and serve immediately. 1 min Ready when: sizzling pan finished with fragrant steam

Make ahead and storing

Best eaten freshly cooked; leftover fried liver turns rubbery upon reheating.

Substitutions

  • calf liver or chicken livers for lamb liver. Chicken livers require slightly less cooking time and should be halved rather than diced.
  • cornflour for plain flour. Provides an equally light crisp crust while keeping the dish entirely gluten-free.

Common mistakes

  • Overcooking the liver. Liver cooked beyond medium quickly becomes chalky, dry, and bitter; searing quickly over high heat keeps the core tender.
  • Crowding the pan. Too much liver in the skillet drops the surface temperature, causing the pieces to release juices and stew rather than brown crisply.

Regional variants

  • Sykotakia tiganita riganta: finished strictly with olive oil, lemon, and heavy oregano without wine or deglazing liquids.
  • Peloponnesian tomato glaze: a tablespoon of tomato paste is stirred into the pan right before deglazing.

About the dish

A staple of traditional Greek tavernas and household kitchens, pan-fried liver has long been prized as an economical, nutrient-dense meze. Offal cookery holds a deep place in Greek domestic traditions, particularly around Easter when whole lambs are broken down. In taverna settings, small pieces of lamb, calf, or poultry liver are dusted in flour and flash-fried over high heat alongside softened onions, then finished with fresh lemon juice and dried oregano. It is typically served straight from the pan alongside crusty bread and retsina.

Found in all of Greece. Cooked for everyday, easter.

Cousins elsewhere

  • Arnavut ciğeri (Turkish). Albanian-style fried liver tossed with onions is popular across the Aegean, though the Turkish version often uses chilli flakes and sumac.
  • Fegato alla veneziana (Italian). Both rely on thinly sliced liver cooked with sweet sautéed onions, though the Venetian style uses butter and white wine vinegar.
