134Cretan barley rusks
Κριθαρένιο παξιμάδι · Kritharenio paximadi
Also called Dakos rusks, Paximadi Kritis, Koukouvagia rusk.
Method
Traditional Cretan whole-barley rusks. Makes 12 individual dry rusk halves.
You will need
- large mixing bowl
- baking sheet
- baking parchment
- serrated bread knife
- wire rack
- Dissolve the yeast in 100 ml of the tepid water in a large mixing bowl and allow to rest until bubbly. 10 min Ready when: yeast liquid becomes foamy
- Stir in both the barley flour and white bread flour, the salt, olive oil, and the remaining tepid water to form a dense, heavy dough. 3 min Ready when: coarse, heavy dough comes together without loose flour
- Knead on a wooden board until smooth and cohesive, noting that barley produces a denser, less elastic dough than pure wheat. 8 min Ready when: dough is uniform and slightly tacky
- Cover the bowl with a clean towel and let the dough rise in a warm room until puffed. 45 min Ready when: dough increases by roughly half its initial size
- Shape the dough into six oval rolls, score each deeply across its equator horizontally without cutting all the way through, place on a baking parchment-lined tray, and rest. 25 min Ready when: rolls swell slightly
- Preheat a conventional oven to 190°C (375°F) and bake the loaves until firm and browned. 35 min · 190°C / 375°F Ready when: loaves sound firm and crust is matte and light brown
- Remove the loaves from the oven, let them cool for 15 minutes, then pull or cut them cleanly along the scored line into twelve halves. 15 min Ready when: halves expose their rough, open crumb
- Lower the oven temperature to 110°C (230°F), arrange the split halves cut-side up on the trays, and bake until thoroughly dehydrated and crisp right to the centre. 85 min · 110°C / 230°F Ready when: rusks are completely dry, light, and snap cleanly with no core moisture

Make ahead and storing
These are designed to be made entirely ahead and store for months.
Store in a dry tin, cloth sack, or airtight container for up to 6 months.
Substitutions
- wholemeal wheat flour for wholegrain barley flour. Replaces barley for a lighter, wheat-based paximadi, though less traditional for Crete.
Common mistakes
- Using only barley flour without any strong wheat flour.. Barley lacks sufficient gluten; without wheat, the rusks will crumble into gravel during drying.
- Rushing the second low-temperature drying stage.. Any trapped moisture in the core will cause the rusks to turn mouldy during storage.
Regional variants
- Kytherian olive oil rusks made with pure wheat and yellow flour
- Sfakian miniature round rusks rolled with toasted sesame seeds
About the dish
Barley rusks hold protected geographical status as Paximadi Kritis. Because Cretan soil historically favoured hardy barley over delicate wheat, and island households had limited firewood to bake bread weekly, bakers dried leavened barley loaves in the residual heat of cooling communal ovens. The resulting dry, durable rusks could keep for months during sea voyages and pastoral migrations. Before eating, the rock-hard bread is moistened with water or tomato juice and dressed with olive oil, forming the foundation of the iconic Cretan dakos.
Found in Crete. Cooked for everyday, lent, summer.
Cousins elsewhere
- Fresella (Italian). Twice-baked Southern Italian ring rusks soaked briefly in water and topped with tomatoes and olive oil.
- Peksimet (Turkish). Both derive their names from the Byzantine Greek paxamation, describing twice-baked ship rusks.
