028Raw cabbage salad
Λαχανοσαλάτα · lahanosalata
Also called Greek coleslaw, politiki salata (when spiced).
Method
Everyday winter shredded cabbage salad. A superb partner to rich winter bean soups like fasolada, roasted pork, or grilled sausages.
You will need
- large mixing bowl
- sharp knife or mandoline
- box grater
- small whisk
- Place the finely shredded cabbage into a large mixing bowl and sprinkle the sea salt evenly over it. 2 min Ready when: salt evenly scattered across raw cabbage
- Using clean hands, vigorously massage and rub the cabbage leaves together for about 3 to 4 minutes until they soften, wilt slightly, and reduce in volume by nearly a third. 4 min Ready when: cabbage turns glossy, supple, and releases moisture
- Add the grated carrot, celery leaves, and flat-leaf parsley to the bowl with the wilted cabbage. 2 min Ready when: bright orange and green colours scattered throughout
- Whisk the lemon juice and extra virgin olive oil together with black pepper, then pour over the salad. 2 min Ready when: cloudy emulsion formed and poured over vegetables
- Toss the salad thoroughly to ensure the dressing completely penetrates the cabbage shreds. 2 min Ready when: every shred is glossy and evenly seasoned
- Let rest at room temperature for 15 minutes before serving so the cabbage absorbs the sharp lemon dressing. 15 min Ready when: cabbage softens further while keeping a brisk snap
Tap a step to tick it off.
Make ahead and storing
Can be shredded and dressed up to 2 hours in advance without going limp.
Keeps well covered in the fridge for up to 2 days.
Substitutions
- red wine vinegar for freshly squeezed lemon juice. Common in northern Greece where a sharper vinegar punch is often preferred.
Common mistakes
- Skipping the salt massage. Raw winter cabbage remains stiff, dry, and chewy if not bruised and softened with salt before dressing.
- Shredding the cabbage too coarsely. Thick cuts of cabbage cannot properly absorb the oil and lemon dressing.
Regional variants
- Politiki salata style, adding Florina peppers, garlic, and celery with a splash of vinegar
- Macedonian style, adding a pinch of hot bukovo pepper flakes for warmth
About the dish
Lahanosalata is the supreme Greek winter salad, filling taverna tables throughout the colder months when ripe tomatoes disappear. While cabbage has been grown in the Aegean basin since classical antiquity, this simple raw shredded preparation became ubiquitous across modern urban and rural households. The secret of a proper lahanosalata lies in hand-kneading the finely shredded cabbage with salt to break down its stiff cellular walls, creating a silky yet crunchy texture that greedily drinks up sharp lemon juice and robust olive oil.
Found in all of Greece. Cooked for everyday, winter.
Cousins elsewhere
- Lahana salatası (Turkish). A very similar winter shredded cabbage salad dressed with lemon and oil or light vinegar.
- Salatit malfouf (Levantine). Shredded cabbage dressed sharply with garlic, dried mint, lemon juice, and olive oil.
