084Cabbage and rice
Λαχανόρυζο · Lahanorizo
Also called Greek cabbage rice, Lahanorizo kokkinisto.
Method
Classic red winter style (kokkinisto). Delicious warm or at room temperature, paired traditionally with feta and Kalamata olives when not fasting.
You will need
- large wide heavy pot
- wooden spoon
- Heat 60 ml of olive oil in a wide, deep pot over medium heat and sauté the onion and sliced leek until softened and glossy. 5 min Ready when: onions turn translucent and fragrant
- Add the chopped cabbage in batches, turning frequently with a wooden spatula until it wilts and reduces in volume by half. 10 min Ready when: cabbage shrinks down and edges begin to colour lightly
- Stir the tomato paste and paprika into the base of the pot and cook for 1 minute until fragrant. 1 min Ready when: paste darkens and aromas release
- Pour in the boiling water, salt, and black pepper, bring to a rolling simmer, then cover and cook over medium-low heat for 10 minutes. 10 min Ready when: cabbage becomes half-tender
- Scatter the rinsed rice evenly across the cabbage, push it lightly below the surface of the liquid without stirring heavily, cover, and simmer gently on low heat until the rice absorbs the liquid. 15 min Ready when: rice is tender and liquid is mostly absorbed
- Remove the pot from the heat, drizzle over the lemon juice and remaining raw olive oil, cover with a clean tea towel beneath the lid, and let rest for 10 minutes before serving. 10 min Ready when: steam is absorbed and grains fluff up

Make ahead and storing
Can be cooked a few hours in advance; tastes even sweeter once it settles.
Store refrigerated in an airtight container for up to 3 days; add a splash of water when gently reheating.
Substitutions
- extra lemon juice and fresh dill for tomato paste. Omit the tomato paste entirely and increase lemon juice to 50 ml for the white (aspro) version.
Common mistakes
- Adding the rice at the very beginning alongside the raw cabbage.. Cabbage requires longer cooking than rice; adding both together results in overcooked, sticky mush.
- Stirring the pot constantly after adding the rice.. Excessive stirring breaks the rice grains and releases excess starch, creating a gummy porridge instead of distinct grains.
Regional variants
- In northern Greece, a pinch of cumin and dried hot boukovo chilli are standard additions.
- The lemon-forward white version (lahanorizo aspro) with plenty of fresh dill is common in southern Greece.
About the dish
Lahanorizo is an enduring staple of the Greek winter table and a core dish of the ladera (oil-braised) vegetable repertoire. Created as humble, inexpensive domestic nourishment during colder months and Orthodox fasting periods, it pairs the natural sweetness of shredded white cabbage with starchy rice and plenty of olive oil. Families prepare it either kokkinisto (red, enriched with tomato paste and sweet paprika) or aspro (white, finished generously with fresh lemon juice), depending on regional preference.
Found in all of Greece. Cooked for everyday, lent, winter.
Cousins elsewhere
- Pirinçli lâhana (Turkish). A very similar home-style Ottoman and Turkish vegetable stew combining shredded cabbage, rice, tomato, and olive oil.
- Kupus sa pirinčem (Balkan). A common Balkan peasant dish of shredded braised winter cabbage cooked together with rice.
