005Meat pie
Κρεατόπιτα · kreatopita
Also called kreatopitta.
Method
Mainland home-style meat pie. Serve warm or at room temperature with a green salad or yoghurt.
You will need
- rolling pin (verga)
- 36 cm round baking tin (tapsi)
- heavy frying pan
- mixing bowls
- pastry brush
- In a large mixing bowl, combine 500 g plain flour with 1 tsp salt, 30 ml olive oil, and 230 ml tepid water; knead for 8 to 10 minutes until smooth and elastic, then cover with a damp cloth and leave to rest for 30 minutes. 40 min Ready when: dough is smooth, supple, and non-sticky
- Warm 30 ml olive oil in a wide frying pan over medium heat, add 2 chopped onions, and cook gently for 6 to 8 minutes until translucent. 8 min Ready when: onions are soft and golden at the edges
- Add 2 chopped garlic cloves and 800 g minced lamb shoulder to the pan; cook over medium-high heat, breaking up the meat with a wooden spoon, until browned and all liquid has evaporated, about 10 minutes. 10 min Ready when: meat is browned with no liquid remaining in pan
- Remove the pan from the heat, stir in 60 g uncooked short-grain rice, 3 tbsp chopped mint, 1 tsp salt, and a generous grind of black pepper, then let cool completely for 15 minutes. 15 min Ready when: mixture cools to lukewarm
- Fold 150 g crumbled feta and 2 beaten eggs into the cooled meat mixture until well combined. 2 min Ready when: eggs and cheese evenly distributed throughout the filling
- Preheat a conventional oven to 190°C (375°F) and brush a 36 cm round baking tray with olive oil. 5 min · 190°C / 375°F Ready when: oven fully preheated
- Divide the rested dough into 6 equal balls; roll out 3 balls on a floured surface into thin circular sheets larger than the pan, brushing each layer with olive oil as you layer them into the base and up the sides. 15 min Ready when: three pastry layers line bottom and drape over rim
- Spread the meat filling evenly over the pastry base, then roll out the remaining 3 dough balls into thin rounds, brushing each with olive oil as you layer them over the filling. 10 min Ready when: filling is level and completely covered
- Trim excess overhang, fold and twist the top and bottom dough edges together into a decorative rim (kothoroi), score the top pastry into diamond portions, and brush generously with remaining olive oil and a flick of cold water. 5 min Ready when: pastry scored without cutting through the base
- Bake in the lower third of the oven for 60 to 70 minutes at 190°C (375°F) until the pastry is deeply golden and crisp underneath, then rest for 15 minutes before slicing. 70 min · 190°C / 375°F Ready when: crust is crisp, dark golden-brown, and hollow when tapped
Tap a step to tick it off.
Make ahead and storing
The filling can be cooked and chilled 24 hours in advance; assemble the pie just before baking.
Keeps well in the fridge for up to 3 days; reheat in a hot oven to restore crispness.
Substitutions
- minced beef chuck or goat for boneless lamb shoulder. Common in northern and central Greece when lamb is less available.
- store-bought thick country filo sheets for plain flour. Use 6 sheets of thick country-style filo if rolling by hand is impractical.
Common mistakes
- Adding the eggs and cheese to hot meat filling. Residual heat will curdle the raw eggs prematurely and create a separated, oily filling.
- Skipping the rice or binder grain. Lamb produces moisture and rendered fat as it bakes; without a grain to absorb it, the bottom pastry turns soggy.
Regional variants
- Kefalonitiki kreatopita: features marjoram, tomato paste, garlic, and sometimes mixed lamb, pork, and beef.
- Zagori kreatopita: often seasoned with cinnamon and wild mountain herbs without tomato.
About the dish
Kreatopita is especially rooted in the pastoral highlands of Epirus, Thessaly, and the Ionian island of Kefalonia. Historically, it was baked after slaughtering a sheep or goat for major winter feast days such as Christmas or New Year. Mainland versions typically incorporate hand-rolled filo leaves encasing braised minced or small diced lamb, sometimes enriched with a modest amount of rice or cracked wheat to absorb the savoury meat juices, along with eggs, grated cheese, and warming spices like mint or cinnamon.
Found in Epirus, Thessaly, Ionian Islands, Macedonia. Cooked for sunday lunch, everyday, christmas, new year.
Cousins elsewhere
- Burek sa mesom (Balkan). Layered pastry encasing seasoned minced or diced meat is shared widely across the Balkan peninsula.
- Fatayer lahma (Levantine). Enclosed meat pastries with onion and warming spices represent an ancient shared Mediterranean tradition.
