Κοκορέτσι · kokoretsi
Also called kokoretzi.
Method
Traditional spit-roasted Easter style. Carve straight onto wooden boards with sea salt, oregano, and lemon halves.
You will need
- Rotisserie spit or sturdy long skewers
- Charcoal grill
- Basting brush
- Sharp carving knife
- Place the cut pluck cubes in a wide basin and season thoroughly with the salt, crushed black pepper, and dried oregano, turning gently so every piece is generously seasoned. 10 min Ready when: the meat pieces are evenly coated and releasing moisture
- Thread the pieces tightly onto a long stainless-steel spit, alternating liver, heart, lung, and sweetbreads to balance texture and moisture along the skewer. 20 min Ready when: a dense, uniform cylinder about 60 to 70 cm long with no loose gaps
- Gently stretch the softened caul fat and wrap it tightly around the threaded skewer in a single protective layer. 5 min Ready when: the meat is completely covered by a thin veil of lace fat
- Tie one end of the intestine to the base of the skewer, then wind it lengthwise back and forth a few times, followed by tight, continuous spiral loops around the entire cylinder until the offal is firmly sealed and the package is smooth, tying off the end securely. 25 min Ready when: a taut, compact, neat cylinder with no offal bulging through
- Prepare a charcoal bed with gentle, even embers and place the spit at least 30 cm above the coals, turning steadily and rapidly at first so the exterior dries out without scorching. 30 min Ready when: the outer skin stops dripping and turns pale and firm
- Lower the spit closer to the coals (about 15 to 20 cm) and continue rotating slowly, basting occasionally with olive oil mixed with lemon juice. 60 min Ready when: fat bubbles steadily through the casing and droplets sizzle on the embers
- Grill for an additional 20 to 30 minutes over concentrated embers until the outer casing turns dark amber, intensely blistered, and thoroughly crisp. 30 min Ready when: casing is completely crackling and a probe inserted into the centre comes out very hot with clear juice
- Transfer the skewer to a cutting board, let rest for 5 minutes, then carve into thick round slices with a very sharp chef's knife. 5 min Ready when: clean slices showing crisp outer ring and moist, multicoloured interior
Tap a step to tick it off.
Make ahead and storing
Can be completely skewered and wrapped the evening before; store well-chilled in the fridge wrapped in parchment.
Best eaten hot from the spit; leftovers keep 2 days in the fridge and are best pan-fried briskly to recrisp.
Substitutions
- kid goat offal for lamb pluck (heart, liver, lungs, spleen, sweetbreads). Standard alternative in Greek pastoral villages, with a milder aroma and leaner texture.
Common mistakes
- Placing the raw kokoretsi too close to blazing coals at the start.. High heat instantly bursts the outer intestine skin, spilling melted fat and charring before the offal cooks through.
- Threading the offal pieces loosely on the spit.. Air pockets cause the cylinder to cook unevenly and wobble or slip during turning.
Regional variants
- Kokoretsi fournou: baked on a rack in a home oven when outdoor spit roasting is not possible.
- Peloponnesian kokoretsi: heavily seasoned with cracked black pepper and sweet paprika between the layers.
About the dish
Kokoretsi is the archetypal Greek festive spit-roast, inextricably bound with Orthodox Easter Sunday across mainland Greece and the islands. Alternating chunks of seasoned lamb pluck (heart, lungs, liver, and sweetbreads) are threaded onto a long spit, shrouded in caul fat, and bound securely with layers of meticulously cleaned intestines. Spatula-turned or rotated over dying embers, it cooks slowly until the casing becomes mahogany and crisp while the interior remains tender. While related offal roasts span the Ottoman world and the Balkans, kokoretsi remains Greece's ultimate spring ritual.
Found in all of Greece. Cooked for easter, sunday lunch, panigiri feast.
Cousins elsewhere
- Kokoreç (Turkish). The Turkish preparation is grilled on horizontal skewers over charcoal, often chopped finely and served in bread with hot spices.
- Kukurec (Albanian). Common throughout Albania and the southern Balkans, sharing the same spit-roasting technique of offal wrapped in intestines.
