Method

Village style with browned butter and feta. Eat immediately while hot and buttery.

You will need

  • large pot
  • small skillet or butter warmer
  • colander
  • wooden spoon
  1. Bring a large pot of heavily salted water to a rapid rolling boil over high heat. 5 min Ready when: rolling boil
  2. Add 400 g hilopites and boil for 5 to 7 minutes until tender yet firm to the bite, stirring occasionally to prevent sticking. 6 min Ready when: al dente texture
  3. Meanwhile, melt 80 g butter in a small skillet over medium heat, swirling until the milk solids foam, turn pale hazelnut brown, and release a nutty fragrance, about 3 to 4 minutes. 4 min Ready when: foamy, fragrant, and light brown
  4. Reserve 60 ml of the pasta cooking water, then drain the hilopites thoroughly in a colander. 1 min Ready when: drained
  5. Return the drained hilopites to the warm pot, pour over the hot browned butter and reserved pasta water, tossing vigorously to coat every strand. 1 min Ready when: glossy and thoroughly coated
  6. Fold through half of the 200 g crumbled feta and half of the optional 50 g grated dry mizithra, allowing them to melt slightly into the warm pasta. 1 min Ready when: cheese melting into emulsive coating
  7. Transfer immediately to warm bowls, scatter the remaining feta and mizithra over the top, grind over generous black pepper, and serve hot. 1 min Ready when: steaming and creamy

Make ahead and storing

Not suitable for advance cooking; best prepared moments before dining.

Refrigerate leftovers for up to 2 days; warm gently in a pan with a small pat of fresh butter.

Substitutions

  • tagliatelle or small pasta shapes for traditional Greek egg noodles (hilopites squares or ribbons). Cut ribbons into small pieces if mimicking Peloponnesian square hilopites.
  • extra virgin olive oil for unsalted butter (preferably sheep or goat butter). Lighter and herbal, though butter is the authentic rustic standard.

Common mistakes

  • Overboiling the hilopites until mushy. Egg pasta cooks much faster than durum wheat pasta and turns soggy within minutes.
  • Burning the butter past the nutty brown stage. Burnt butter tastes bitter and overwhelms the delicate pasta and tangy sheep cheese.

Regional variants

  • In the Peloponnese, local sheep butter (voutyro galaktos) is specifically prized for its pungent aroma.
  • In Crete, aged mizithra replaces feta entirely.

About the dish

Hilopites are traditional Greek egg noodles, customarily cut into tiny squares or narrow flat ribbons. Prepared in village households during late summer when milk and eggs were abundant, they were sun-dried on clean linen and stored in cloth sacks for the winter. Serving freshly boiled hilopites dressed simply with sizzled country butter and copious amounts of crumbled feta or dried grated mizithra is an ancient comfort food across mainland Greece, especially in Arcadia, Thessaly, and Roumeli.

Found in all of Greece. Cooked for everyday.

Cousins elsewhere

  • Fettuccine al burro (Italian). Both celebrate freshly boiled egg pasta emulsified with rich butter and grated hard cheese.
